CTC is a way of making black tea. The leaf passes through rollers that crush, tear and curl it into small granules, which infuse quickly and brew a deep-coloured cup.
CTC stands up to milk and sugar, which is why it is the usual choice for chai. Brew it as a plain cup, or simmer it on the stove the way chai is made at home.

Use 1 teaspoon of tea (about 2 g) for 200 ml water just off the boil. Steep for 3-4 minutes, strain, then add milk or sugar to taste. For stovetop chai, boil 1 teaspoon of tea in 150 ml water for 1-2 minutes, add 100 ml milk, bring back to the boil and simmer for 2-3 minutes, then strain.
